- Pre heat oven 200 degree..
- Remove plantain peel, slice and set aside..

- Spray baking dish, layer 1st batch of plantain and pour in half of the egg, layer final batch of the plantain and pour in the remaining egg..
- Send to the oven and bake for 15 to 20 mins..
- Serve with tea, oat or any cereal of your choice..
