Chicken, Tomato & Sweet Potato Bake. I posted a sneak peek of it to my Instagram story last week and immediately received a flurry of messages requesting the recipe. You must adore fresh tomatoes and easy skillet meals as much as I do. I knew we were virtual friends for a reason!
Quick and healthy chicken breast with tomatoes that are in their prime ripeness end of August - beginning of September. And the ones I can't stop buying during my farmers market haul every week. So juicy, sweet and tender, local tomatoes are nothing like supermarket's "cardboard" tomatoes we are about to experience. You can have Chicken, Tomato & Sweet Potato Bake using 13 ingredients and 2 steps. Here is how you achieve it.
Ingredients of Chicken, Tomato & Sweet Potato Bake
- It's 2 of Chicken breasts Cut into 3 chunks.
- It's 250 g of Sweet potatoes Peeled and cut into chunks.
- You need 1 of Onion Cut into chunks.
- You need 1/2 of broccoli head Cut into florets.
- Prepare 8 of cherry tomatoes.
- You need 2 of Garlic cloves Minced.
- It's 1 Tsp of Rosemary.
- You need 1 Tsp of Thyme.
- It's 1 Tbsp of Olive oil.
- You need 1 Tsp of Smoked paprika.
- It's 1 Tbsp of Lemon juice.
- You need 100 Ml of Chicken stock.
- You need of salt and pepper for seasoning.
Sprinkle the chicken with salt and pepper. Heat the oil and butter in a heavy-bottom skillet. Add the shallots and garlic around the chicken. Cook briefly; add the tarragon, tomatoes, vinegar, capers, wine and tomato paste.
Chicken, Tomato & Sweet Potato Bake step by step
- Preheat the oven to 180 oC Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl Mix until well combined.
- Pour into a casserole dish and roast in the oven for 25 minutes Add in the chicken and chicken stock Return to the oven for 25 minutes.
Pour in wine, scraping the bottom of the pan to loosen any bits. Pour in tomatoes with their juice and add tomato paste. Add salt and pepper to taste, stirring to combine. Bring sauce to a boil, then turn off heat. Chicken, coated in a tomato herb and garlic sauce is anything but boring.
