- 1. In a pan. Add oil. Fry the onion, bell peppers, tomatoes, white cabbage and jalapeños. Lastly add paneer. After frying for 2mins on high flame. Add the salt, red chilly powder, black pepper powder and oregano to taste. Add the coriander and Mint leaves. Mix well. Last add the mozzarella cheese and mix well. Cook for 2more mins so the cheese get melted and properly mix with the veggies. Switch off the flame and keep this stuffing aside..
- 2. Prepare a topping mixing mayonnaise, tomato sauce, grated mozzarella cheese, salt, oregano and black pepper powder. Mix well. The topping for the taco filling is ready..
- 3. Now it’s final assembly time. Just make the tacos slightly hot by heating the tacos in the pan for sometime just to make it fresh. Then add the paneer filling in the center and pour some toppings over it. From top grate some cheese over it..
- 4. Grease a baking pan with some oil. Keep the filled tacos and use the toothpick to ceal the center of tacos which will give the taco the folded shape. Now bake it in a preheated oven at 350F for about 15mins..

Now I was just going to make simple tortillas for the tacos. But at the last secon d I remembered the leftover spinach in the fridge. Funny thing is spinach goes perfectly well with the pea-cottage cheese filling. S o I blanched the spinach and added it in the tortilla dough for a fun little twist on these Mattar Paneer Tacos. Indian vegetarian tacos are fantastic to eat on a Taco Tuesday or any other night of the week.
