Ingredients of Stuffed Spinach & Feta Mushrooms

  1. It's 4 of large steak mushrooms.
  2. Prepare 1 of small white onion or 1/2 large onion.
  3. Prepare 2-3 of minced garlic cloves.
  4. Prepare 150 g of baby spinach.
  5. It's 1 slice of feta.
  6. You need of Origanum.
  7. It's Splash of olive oil.
  8. You need of Grated parmesan & mozzarella or cheddar.
  9. Prepare of Optional: 6 pieces sundried tomatoes, pepper or olives (chopped).

Stuffed Spinach & Feta Mushrooms step by step

  1. Preheat oven to 180 degrees Celsius.
  2. Remove stalks using a spoon or knife from mushrooms and cut up the stalk.
  3. Finely chop onion, and add garlic to saute in olive oil for 3 minutes or until onions become slightly translucent. Add the cut up mushroom stalks.
  4. Roughly chop rinsed spinach and add to pan. Place lid on pan. Stir occasionally. Season with oreganum and pepper.
  5. Once spinach is cooked, remove from heat. Crumb the feta into the mixture (add olives/ sundried tomatoes - optional).
  6. Place mushrooms on an oven tray and cook for about 5 - 7 minutes or until the mushroom sweats and there is liquid inside the mushroom.
  7. Remove mushrooms from oven and drain liquid from mushrooms.
  8. Fill mushrooms with spinach feta mixture and add grated cheese on top.
  9. Bake till cheese slightly browns.
