Apricot chicken goes well with plain brown or white rice. We love spooning some of the excess sauce over the rice. If grilling or baking, you can serve it with baked or roasted potatoes. A simple salad also goes well with this chicken. I like doing a side salad with vinaigrette and maybe some blue cheese crumbles.
